Deviled eggs are a quick & easy dish. I made them for Easter brunch at my parent’s house. They are also great for a potluck or picnic. Juliska has the perfect deviled egg platter! I use this egg timer ($6) for perfect hard boiled eggs every time. Once boiled, I add cool water and ice to the pot. This ensures the yolks stay a bright yellow. Peel the eggs quickly – the longer you wait the harder they are to peel!
Carefully slice the eggs in half and remove the yolks. Place the empty egg halves on the platter while you prepare the filling. I keep it simple! Add a mixture of 2/3 mayo to 1/3 whole grain mustard to the egg yolks. Add salt & pepper to taste. Using a mini spatula, fill the eggs. Sprinkle paprika on top and garnish with your favorite topping. I like pimento stuffed olives.
